Recipe: Fiery Sauteed Shrimp with Healthy Vegetables

We've got campfires to enjoy and kids to keep up with; needless to say Adventure Parents are all about finding one-pot or one-pan meals. This easy-to-prepare (not to mention easy-to-clean afterward) dish is just one example of all good things coming together. If you make this meal in close proximity to other camping families, fair warning that the smell will bring empty-plate strangers with pathetic puppy dog eyes lurking around your camp stove.


  • 1 lb medium or large shrimp, thawed (leave shells on if you wish)
  • 1 Tbsp Extra-virgin olive oil
  • 1/4 cup chopped green onion
  • 1/2 chopped red bell pepper
  • 2 cloves garlic, finely chopped
  • 2 or 3 Serrano peppers*, seeded and chopped
  • 2 Tbsp cilantro
  • 1 Tbsp Lime or lemon juice
  • Salt/pepper


  1. Thaw the shrimp, pat dry. Bring the oil to medium heat in large pan and add shrimp. Sautee 1 minute.
  2. Add other ingredients, except the cilantro, lime juice, salt and pepper. Sautee another 5-6 minutes until shrimp are opaque. Don't overcook or they will be tough.
  3. Remove from heat, stir in cilantro, lime, salt and pepper.

Shortcuts and/or Alternatives

  • Buy shrimp in the frozen section in a heavy duty freezer-sealed bag. No leaks in your cooler or fridge, and you don't have to wait in line at the meat department.
  • Chop and combine the vegetable mixture ahead of time at home and seal in a plastic baggie. At camp, just dump it on the shrimp as it cooks, and you're done.
  • Substitute jalapeno peppers for the serranos for a different flavor, or chop the peppers with seeds still inside for more heat. *(Warning, the oil from the peppers can burn your eyes, so use plastic gloves when you cut them and wash immediately after with hot soapy water)
